BRINJAL BAJJI (VANKAYA BAJJI)




Ingredients: 
  1.     Large brinjals                 -    4
  2.     Besan                              -    2 cups
  3.     Salt to taste
  4.    Red chilli powder            -    1 tsp
  5.    Soda powder                   -    1 pinch
  6.    Oil for deep fry

For stuffing: 
  1.   Vamu                                       -     1/2 tsp
  2.   Green Chilli                              -     5 
  3.   Tamarind pulp                          -     5 tsp 
  4.   Coriander leaves  
   
Method :
  •  For stuffing grind the 4 ingredients in mixer to make past & keep a side.
  •  Slit the brinjals  for stuffing.
  •  In a pan add water(3-4 cups), salt, turmeric powder & brinjals, boil for 15 mints.
  •  After boiling take  brinjals in to a plate & let them cool for 15 mints.
  •  Now fill the paste in brinjals & keep a side.

For bajji:
  •  In a bowl add besan, salt, red chilli powder, soda & water mix it in smooth batter for bajji.
  •  Heat oil in pan.
  •  Dip the brinjals in batter & deep fry in oil.
