VEGETABLE BIRYANI (Microwave)


INGREDIENTS:
  1. Basmati rice                           - 1 1/2 cup
  2. Green peas                             - 1/4 cup
  3. Carrot chopped                      - 1nos
  4. Cauliflower (small florets)  - 1/4 cup
  5. French beans chopped           - 4-5 nos
  6. Onions slices                         - 2 nos
  7. Onion chopped                      - 1 nos
  8. Tomatoes chopped                - 2 nos
  9. Green chillies chopped         - 2 nos
  10. Ginger finely chopped          - 1 inch
  11. Cumin seeds                         - 1 tsp
  12. Cardamoms                           - 4-5
  13. Oil                                         - 3 tbsp
  14. Cloves                                    - 4-5
  15. Cinnamon                             - 1 inch stick
  16. Bay leaf                               - 1
  17. Curd                                     - 1/2 cup
  18. Red chilli powder                - 1/4 tsp
  19. Coriander powder               - 1 tsp
  20. Turmeric powder                - 1/4 tsp
  21. Salt to taste           
  22. Coriander leaves few
  23. Mint leaves
METHOD:
  • Wash and soak rice for 1/2 hour.
  •  In microwave safe bowl add rice, salt and 5 cups of water.
  • In microwave and cook for 10 minutes (covered). 
  • Drain the water and keep aside.
  • In separate microwave bowl place sliced onion, 2 tbsp oil, cook for 4 minutes (uncovered).
  • Remove and drain the oil keep aside.
  • In another separate microwave bowl add 1 tbsp oil, chopped onion, ginger, cumin seeds, green chillies, cardamoms,cloves, cinnamon and bay leaf, cook for 3 minutes (uncovered).
  • Add green peas, carrot, cauliflower, french beans, tomatoes, coriander leaves, curd, red chilli powder, turmeric powder, salt and 1 1/2 cup water, and cook for 12 minutes (cover).
  • In another microwave bowl place half vegetable and cover with half of the rice, repeat the layer, cook for 12 minutes (covered).
  • Add sliced onions, mint leaves on rice cook for 2 minutes (covered).
  • Garnish with cashew and serve hot.
