Ingredients:
- Brinjals - 8
- Sesame seeds - 1 tbsp
- Peanuts - 1 tbsp
- Dry coconut powder - 1 tbsp
- Kuskus - 1 tbsp
- Coriander powder - 1 tsp
- Ginger - 1 inch
- Red chilli powder - 1/2 tsp
- Cinnamon, clove, cardamom powder - 1 tsp
- Oil - 3 tbsp
- Turmeric a pinch
- Salt to taste
- Slit the brinjals into 4 parts and deep fry in oil, keep aside.
- Dry roast peanut, kuskus, sesame seeds separately till brown.
- Grind peanut, kuskus, sesame seeds, coconut powder, coriander powder, ginger, onion, tomato into smooth past .
- Heat oil in a pan add cinnamon, clove, cardamom powder, grinded mixture, salt, red chilli powder and turmeric powder .
- Cook till moisture is absorbed and oil come out.
- Add brinjals and some water cook for 15 minutes.
- Garnish with coriander leaves.
