BAGARA BAINGAN


Ingredients:

  1. Brinjals                                                 - 8
  2. Sesame seeds                                   - 1 tbsp
  3. Peanuts                                                - 1 tbsp
  4. Dry coconut powder                           - 1 tbsp
  5. Kuskus                                                 - 1 tbsp
  6. Coriander powder                                 - 1 tsp
  7. Ginger                                                  - 1 inch
  8. Red chilli powder                                  - 1/2 tsp
  9. Cinnamon, clove, cardamom  powder    - 1 tsp
  10. Oil                                                        - 3 tbsp
  11. Turmeric a pinch
  12. Salt to taste
Method:
  • Slit the brinjals into 4 parts and deep fry in oil, keep aside.
  • Dry roast peanut, kuskus, sesame seeds separately till brown.
  • Grind peanut, kuskus, sesame seeds, coconut powder, coriander powder, ginger, onion, tomato into smooth past .
  • Heat oil in a pan add cinnamon, clove, cardamom  powder, grinded mixture, salt, red chilli powder and turmeric powder .
  • Cook till moisture is absorbed and oil come out.
  • Add brinjals and some water cook for 15 minutes.
  • Garnish with coriander leaves.
