STUFFED BRINJAL


Ingredients:
  1. Brinjals                              - 6 no
  2. Peanut                               - 1/4 cup
  3. Coriander seeds                - 1/4 cup
  4. Channa dal                       - 1/4 cup
  5. Urad dal                          - 1/4 cup
  6. Red chillies                      - 4 no
  7. Sesame seeds                  - 1/4 cup
  8. Oil for deep fry
  9. Salt to taste

Method:
  • Dry roast  peanut, coriander, channa dal, urad dal, red chillies and sesame seeds separately.
  • Grind the roasted ingredients and salt into fine powder keep aside. 
  • Slit the  brinjals and deep fry in oil.
  • After deep frying the brinjals stuff the grinded powder.
  • Serve hot with rice.
